As the climate in Kentucky varies gently in the winter and summer, the barrels expand and contact at a pronounced rate, hastening the maturation process of Wild Turkey Bourbon and ultimately improving its quality. Wild Turkey Bourbon is always aged in new white oak barrels. This new wood means that the bourbon draws a great deal of color and flavor from the barrel, with vanilla and caramel being the predominant characteristics. Wild Turkey uses barrels with the heaviest (and most expensive) deep-layer char, which lends Wild Turkey its signature flavor and deep russet color.
